Healthy Raw Summer Salad

Ingredients

  • 6-8 fresh kale leaves, chopped
  • 1 red onion, finely diced
  • 2 carrots, grated
  • 1/2 cup cauliflower, diced
  • 1/2 cup broccoli, diced
  • 4 cloves garlic, finely diced
  • 2 tomatoes, chopped
  • 1/2 cucumber, sliced
  • 1/2 chilli, finely diced
  • 4-6 sandwich stackers (gherkins)
  • 3 tablespoons juice from sandwich stackers (gherkins)
  • Himalayan salt/pepper to taste

Method

After all ingredients have been cut into their recommended sizes, place in a bowl and mix gently with hands or tongs and serve 🙂
