Lactation Cookies

Ingredients

  • 1/4 cup ground flax seeds
  • 1/2 cup water
  • 6 tbsp melted coconut oil
  • 1 cup coconut sugar
  • 1/4 cup debittered brewers yeast
  • 1 tsp vanilla essence
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 2 scoops protein powder (I like MyProtein Chocolate Brownie)
  • 1 1/2 cups rolled oats
  • 1/2 cup dark chocolate chips

Method

Preheat oven to Fan Bake 180 degrees.

Add all ingredients to a bowl and combine with a wooden spoon. Mixture should be a dough that you can work with in your hands, if too dry add small amounts of water and mix again until consistency is achieved. If too wet add small amounts of protein powder and mix again until consistency is achieved.

Roll mixture into small balls and place on a tray lined with baking paper. The balls will expand a bit so leave some room for this.

Place in the oven and bake for 8-12 minutes depending on how big you make them. Check at 8 minutes and take out when theyre still slightly soft with a light golden colour.

Leave on a rack to cool and eat straight away if you like or place in the fridge to store.

TOP TIP – These yummy treats freeze well so can be made in advance, frozen and then taken out one at a time if you like. They only take 10-15 minutes to defrost 🙂
