Ingredients
- 500gms premium grass fed angus beef mince
- 1/2 red onion, diced
- 1/2 capsicum, thinly sliced
- 2 carrots, grated
- 1/2 brown onion, diced
- 2 bread and butter cucumbers
- 4 mushrooms, diced
- 1 tomato, cubed
- 4 lettuce cups
- 2 slices middle bacon, cubed
- 1 pack Farrah’s taco spice mix
- 4 tsp aioli
- 4 tsp apple cider vinegar
Method
Cook mince and brown onion in a pan on medium heat with a teaspoon of coconut oil, stirring occasionally to ensure mince cooks all the way through. Once nearly cooked, add taco mixture and combine well.
In another pan cook bacon until crispy and set aside.
Place lettuce cups across four serving plates and fill with all the salad ingredients in the order you prefer.
Add spoonfuls of mince across each lettuce cup evenly (roughly 125grams per cup) and spread bacon between the four cups as well.
Finish the dish off with a teaspoon of aioli on each cup and a drizzle of apple cider vinegar to support digestion.
