Crunchy peanut satay chicken


  • 250g boneless chicken breast, diced
  • 1 onion, diced
  • 1/2 cup crunchy natural peanut butter
  • 2 teaspoons paprika
  • 2 teaspoons tumeric
  • 2 teaspoons grainy mustard
  • 30g butter
  • 1 bulb garlic


Add diced onion, butter and garlic to a microwave proof bowl and cook until butter has completely melted.

Mix the paprika, tumeric, grainy mustard and peanut butter into the butter mixture until well combined.

Add the satay mixture to the diced chicken and make sure all pieces of chicken are coated evenly.

Place the coated chicken in a pan on medium heat, placing any extra satay in the pan to cook as well.

Cook the chicken for 4-5 minutes and then flip. Cook for another 5 minutes and check the inside of the chicken is cooked before removing from the heat.

Halve the mixture across two plates on a bed of kale, spinach or lettuce.
